Peanut Butter & Banana...This combo is a favorite in my house full of boys. Nothing is better for a quick healthy snack. However, if you add just a few more ingredients (3 to be exact 😉) to this tried and true combo you can turn the duo into a fast and yummy treat! These Peanut Butter & Banana Cookie Bites are the perfect addition to school lunches, a perfect healthy way to satisfy your sweet tooth, or a perfect snack to pack when you're on the go!
Peanut Butter & Banana Cookie Bites
Recipe makes 12 Cookie Bites
1 ripe banana
2 tablespoons of peanut butter
1/3 cup coconut flour
1/2 teaspoon of pure maple extract (vanilla would taste yummy too)
2 drops of Thieves Vitality Oil
Pre-heat oven to 350 degrees. Line a cookie sheet with parchment paper and set it aside for now.
Add all the above listed ingredients into a bowl. Use a hand mixer to fully mix all of the ingredients together.
Once a dough is formed, use a tablespoon to scoop out portions of dough. Roll the dough into a ball with your hands, and place them on the prepared cookie sheet. Use a fork to make crisscross patterns and flatten the dough.
Bake for 10-15 minutes until the edges start to brown.
Side note: I really like that these cookies have no added sugar, but if these cookies aren't sweet enough for you, consider adding a handful of mini chocolate chips to fold into the dough before scooping it out of the bowl, or you could even roll your dough balls in some sugar before flattening them out with a fork 😉
